We’re on a bit of a theme here but this might be the last one…for now!
You may have had plenty of brownies in your life but have you ever tried a blondie? Here’s your chance!
Ingredients
- 2 eggs.
- 1/2 cup rice malt syrup.
- 1/4 cup coconut oil, melted.
- 1/2 cup peanut butter, natural, smooth or crunchy.
- 1 teaspoon vanilla extract.
- 1 1/2 – 2 cups almond meal.
- 1 teaspoon baking powder.
- 1/2 teaspoon ground cinnamon.
- 50 g 85% dark chocolate roughly chopped or choc bits.
Method
1. Preheat oven to 180ºC and grease or line a small baking tray with baking paper.
2. In a bowl, whisk together the eggs, rice malt syrup, coconut oil, peanut butter and vanilla extract.
3. Then, add in the remaining ingredients and mix to form a batter. Fold in dark chocolate.
4. Pour mixture into the lined baking tray and place in the oven. Bake for 20 minutes until golden on the top.
